Mandarin Spinach Salad with Sautéed Tofu or Chicken

Using pre-cooked chicken cuts the prep time for this to about 15 minutes, making it a good weeknight dinner choice. This was inspired by a salad in a restaurant that was $14.50 a plate- it definitely didn’t cost $29.00 to make this version! Click the photo for the full recipe.
