Easy to make, and has much less ingredients/no preservatives like the store-bought kind! Adjust the amount of mix-ins to suite your tastebuds.
- Cooked chicken cubed into bite size pieces (~ 2 cups)
- 1/4 c. dried cranberries
- 1/4 c. chopped walnuts or sliced almonds
- Salt, pepper, curry powder, and garlic to taste
- Optional: 1/4 c. diced celery & apple
Put chicken cubes into a large mixing bowl. Mix enough mayonnaise into the chicken so that it’s coated, but not too much. Add the cranberries and walnuts or almonds and mix. If using, add the diced celery and apple. Add salt, pepper, curry powder, and garlic to taste and mix.
Serve on your favorite crackers with cheese, or use as a sandwich or wrap filling.
