Two Tomato Pasta

Serves 4


  • Penne or bow tie pasta (enough for 4 servings)
  • Small package of cherry tomatoes
  • 1 small jar tomato paste
  • 1/4c. olive oil
  • Frozen broccoli
  • Salt, pepper, chili powder, and oregano to taste
  • 1 tsp. minced garlic
  • Goat cheese

Boil water for pasta. While pasta water is boiling, cook frozen broccoli separately in a saucepan with a little water until about halfway done.

Add pasta to boiling pot of water and cook according to directions (about 10 min). While pasta is cooking, add tomato paste, chopped cherry tomatoes, and about 1/4 c. olive oil to the broccoli pan. Add water by the tablespoonful until the texture of the mix is like a thick tomato sauce. Stir in garlic. Add salt, pepper, chili powder, and oregano to taste. Cook over medium until the pasta is done.

Drain pasta, combine with the sauce. Just before serving, crumble goat cheese over the top. Enjoy!
